Craiger had a big health project due last week. He had to plan, prepare, & eat a healthy meal with as little help as possible. He had to read labels, use only whole grain & low fat products, use all the food groups, & have the food cater to the "myplate" standards. He had planned for a full week before he began his project.
He made Teriyaki Chicken Salad which consists of spinach, peanuts, onions, chicken, whole grain pasta, mandarin oranges & cranberries, all with a teriyaki dressing. He made a side of veggies & a whole grain roll, & then served lowfat milk as the drink.
He had fun EXCEPT for when he had to pull all the chicken meat off of a rotisserie chicken. He didn't like that one bit.
He did a great job. It was delicious, healthy, & fun. I'm glad the school does projects like these. The kids learn really good life skills & it makes them pay more attention to what they are eating. We had fun.
